Zucchini Bread






Moist & Delicious Zucchini Bread


You Will Need....

  • 2/3 cup oil or shortening

  • 2 and 2/3 cups sugar

  • 4 eggs

  • 3 cups shredded zucchini

  • 2/3 cups water

  • 3 and 1/3 cups all purpose flour

  • 2 tsp. baking soda

  • 1 and 1/2 tsp. salt

  • 1/2 tsp. baking powder

  • 1 tsp. ground cinnamon

  • 1 tsp. ground cloves

  • 2 tsp. vanilla

  • 2/3 cup coarsely chopped nuts (optional)

  • 2/3 cup raisins (optional)

Directions

  1. Preheat oven to 350°F

  2. Grease bottom of 2 loaf pans or 3-4 smaller loaf pans.

  3. Shred zucchini and squeeze out as much water as you can and set aside.

  4. Mix shortening and sugar in a large bowl.

  5. Add eggs, zucchini, and water (from zucchini).

  6. Blend in flour, baking soda, salt, baking powder, cinnamon, clove and vanilla.

  7. Stir in nuts and raisins (optional)

  8. Bake for 60 minutes, or until wooden stick comes out clean. Adjust timing for smaller pans.
