Simple Cucumber Summer Salad




Ingredients

  • 2 cups cucumbers sliced and cut into quarters

  • 1 cup sliced white onion

  • 1 garlic clove minced

  • 1/4 cup white vinegar*

  • 1 teaspoon sugar (optional)

  • 1/2 tablespoon salt

  • 1 tablespoon olive oil

  • freshly ground pepper (to taste)

  • Italian herbs seasoning* (to taste)


Directions

  1. Slice cucumbers and quarter your slices

  2. Cut your onion in half and slice thin

  3. Dice one clove of garlic

  4. Combine all your ingredients into large bowl and mix thoroughly

  5. For best results, store in refrigerator for one hour before serving

*for an Asian twist - use miso, rice wine vinegar, crushed red pepper flake

*instead of Italian herbs seasoning you can try using fresh dill!
