Kohlrabi Slaw

A summer time classic with a twist!



You Will Need....

  • 3 cups Kohlrabi (chopped)

  • 1 cup Carrots (chopped)

  • 1 Apple

  • 2 Green onions thinly sliced

  • 2 tbsp Parsley (chopped)

  • 2 tbsp Olive oil

  • 1 tbsp White wine vinegar

  • 1 tbsp Maple syrup, honey or sugar

  • 1/2 tbsp Dijon mustard

  • 1/2 tsp kosher salt

*Here are the main steps for how to cut kohlrabi:

  • Remove any attached greens. Sometimes kohlrabi is sold with the greens; other times it is simply the bulb.

  • Peel the bulb. You can cut off extras when you’re chopping matchsticks so it doesn’t have to be perfect.

  • Cut thin slices, then place the slices on their side and slice into thin sticks. Then cut off the ends to remove more of the peel.


Directions

  1. Cut all your veggies in matchstick cuts

  2. Add all veggies to a large mixing bowl

  3. Mix in all wet ingredients and salt and toss thoroughly

  4. Enjoy immediately or refrigerate for 1-2 days
